簡単だったらっきょう甘酢 カレー.ポテサラにシャキ食感 昨年はらっきょうを １つ１つ洗って切って… この作業が大変でした 今年は洗ってあるのを買ったので 値段もお手頃ですし めちゃくちゃ楽でした ■材料 洗いらっきょう 1キロ ■つけ汁(甘酢)材料 酒又は水 150ml A. 砂糖 200〜300g A. 塩 大2(約35g) 酢 2カップ(400ml) 赤唐辛子 2本(種抜いておく) ※唐辛子は殺菌効果の為に入れて います。なくても大丈夫です。 【らっきょう準備】 💡辛味を抜きたい場合は、らっきょうに塩をふって一晩寝かせて洗い流すと良いです。それでも辛い場合は、塩漬けの時間を長くして、水をかえなから2日ぐらい水につけて塩抜きすると良いでしょう。辛いのが好きな方はそのままでOK。 洗いらっきょうは熱湯に10秒だけつける。すぐザルにあげてしっかり湯切りし、そのまま冷まして乾燥させる。 【熱湯に入れる理由】 殺菌効果と食感が良くなる事、水分が蒸発しやすくなる為です。 ■作り方 ①酒は煮立たせてアルコールをとばす。材料Aをを入れて溶かす。お酢と唐辛子を入れてしっかり冷ましておく。 ②ジップ
